Our unbleached organic flours, results in a superior flavour and crust development - it’s all down to the high natural enzyme content that you don’t get in bleached and heat treated commercial flours. Once defrosted the natural enzymes slowly start to break down the starches in the flour creating natural sugars for the yeast to feed on, resulting in a more flavoursome, crispy but soft moreish crust that is easily digestible which you only experience from very best Pizza Dough.
For best results defrost for 24-48 hours between 4-6°C, in a chilled environment such as a commercial dough retarder or covered in a refrigerator, then bring up to room temperature allowing 2 -3 hours before cooking. The dough can be stored in the refrigerator for up to 72 hours @ 4°C before cooking, allowing good inventory management and cost control.
