How to Guide

  1. Defrosting - Always ensure the dough balls are covered when defrosting. Either defrost a single dough ball in a deep bowl covered with cling film or several dough balls in a larger container with a lid. For same-day use, leave on a warm bench top for 8-12 hours before cooking. For best results, defrost in the refrigerator overnight and then allow 2-3 hours to come up to room temperature before preparing and cooking; the slow fermentation gives superior results.

  2. Preheat your Oven - Place your pizza stones in the oven or light your gas/wood-fired pizza oven. Allow your oven to reach the maximum temperature 30 minutes ahead of time. You can use two pizza stones in a domestic oven and transfer halfway through the cooking process from the top stone to the bottom stone to crisp the base further.

  3. Dough Shaping & Forming - Generously flour the surface of a clean bench, flour the top of the dough, and place the dough on the floured bench. Dimple the dough on both sides with your fingers to the edge, being careful not to squash the air out of the “rim.” Keep the dough well dusted and continue to stretch the dough evenly from the center.   4. Top Pizza - If you are using a lined baking tray or lightly oiled perforated pan, transfer the dough then top it. If using a pizza peel, top the pizza while on your dusted work surface, then pick it up with the dusted pizza peel. Remember, less is more when it comes to toppings; additional toppings can be added after cooking.

  5. Bake - Load the pizza onto your pizza stone and cook for 10-12 minutes at 250°C, 6-8 minutes at 350°C, or 2-3 minutes at 450°C, or until the cheese and crust are browned to perfection. Keep a watchful eye and rotate when necessary for an even cook.

  • What are your ingredients? Organic wheat flour, water, sea salt, organic activated barley, fresh yeast, and organic extra virgin olive oil. Our ingredients are dairy-free, vegan-friendly, GMO-free. Wheat flour naturally contains gluten. No added sugar, preservatives, or processing aids.

  • The bottom hasn’t cooked as much as the top? Not enough direct heat onto the dough. Our authentic dough is a high moisture product and you need a hot stone to drive this moisture off when cooking. Ensure your pizza stones or cooking surface is as hot as it can be before cooking. Once the pizza is partially cooked, transfer directly to a second hot stone or hot metal tray.

  • The top hasn’t cooked as much as the bottom? This is likely the result of trying to cook in an open oven environment where the hot air is escaping and there is no convection cooking occurring. Ensure your oven is closed up and/or the venting is controlled.

  • I can’t get my pizza dough onto or off the pizza peel? Not enough dusting flour and/or too slow to top and get onto the peel. Don’t leave topped pizza sitting on the bench for extended periods of time as it will absorb the dusting flour. Always make sure your pizza moves freely on the peel before loading it into the oven.

Organic Dough Co.’s authentic Pizza dough balls simply follows the first principle mantra of quality ingredients. Our unbleached organic flours, results in a superior flavour and crust development - it’s all down to the high natural enzyme content that you don’t get in bleached and heat treated commercial flours. Once defrosted the natural enzymes slowly start to break down the starches in the flour creating natural sugars for the yeast to feed on, resulting in a more flavoursome, crispy but soft moreish crust that is easily digestible which you only experience from very best Pizza Dough.

For best results defrost for 24-48 hours between 4-6°C, in a chilled environment such as a commercial dough retarder or covered in a refrigerator, then bring up to room temperature allowing 2 -3 hours before cooking. The dough can be stored in the refrigerator for up to 72 hours @ 4°C before cooking, allowing good inventory management and cost control.
